Homemade Tortillas
Spencer really loves anything bread. He found this recipe for Homemade Tortillas and we will never buy them from the store again. These are just too easy! The recipe comes from Somewhat Simple: http://www.somewhatsimple.com/homemade-flour-tortillas/

2 cups flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil
In a large bowl, combine flour and salt. Stir in water and olive oil to form a soft dough. Let rest 10 minutes. Divide the dough into 8-12 pieces (depending on the size of tortilla you want) and roll each piece into a circle. Heat a large skillet or griddle over medium-high heat, and cook tortillas, turning when bubbles start to appear. The whole cooking process should take between 2 and 3 minutes per tortilla. Wrap tortillas in a towel to keep warm, and serve immediately.

Homemade Soft Pretzels
I made these at Spencer's request. Figuring out how to shape them took us some time. I found them somewhere on Pinterest...and they twisted them all fancy like. We just twist them in half like a cool looking breadstick.

Dough:
  2 1/2 c. flour
  1 tsp. sugar
  1/2 tsp. salt
  2 1/2 tsp. yeast
  1 c. warm water
*let the yeast rise in the water and sugar to do it's thing, then just mix everything in with it.

Topping:
  1/2 c. warm water
  1 Tbsp. baking soda
  2 Tbsp. butter
  salt for sprinkling
*just brush this onto each pretzel after you shape it to your heart's content.

Bake at 400 degrees for 10 minutes. Brush with melted butter and sprinkle with salt.

Our Favorite Pizza Dough
This recipe comes from my mother-in-law. I did change it a little bit though.

Ingredients:
  3 c. warm water
  4 tsp yeast
  3 1/2 c. flour
  1 Tbsp. olive oil
  2 Tbsp. salt
  1 Tbsp. honey
  4+ c. flour

Mix water, yeast, olive oil, and honey. (let sit) Add 3 1/2 cups flour and salt. Mix well. Add up to 4 cups of flour for desired consistency. Bake at 400 degrees for 20 minutes.

Homemade Bread
I got this recipe from the old Tridell Relief Society Cook Book. So the credit really goes to Peggy Perry.

1 1/2 c. wheat flour
2 1/2 c. white flour (I just use whatever flour I have and it's fine)
1/2 c. dry milk
2 tsp. salt
1/3 c. sugar
2 Tbsp. yeast
1 1/2 c. warm water
1/4 c. margarine
1 egg
1 tsp. lemon juice

 Mix warm water, margarine, sugar, and salt. Add egg and dry ingredients but add the yeast after your first cup of flour. Mix well. Let raise at least 20 minutes. (I let it raise much longer than that.) Place in loaves or rolls. Let raise another 20 minutes. Bake at 350 degrees for 35 to 40 minutes.

Yummy Rolls
Another Pinterest recipe. I love it because my mom also uses it a lot. The website makes these rolls into crescent roll-y shaped, but I actually like them better as regular, round, dinner rolls.

The instructions are pretty important on this one so make sure you follow each step.

Ingredients
1 1/2 cups of milk
3/4 cup + 1 Tablespoon Sugar
1 egg
1 Tablespoon salt
2 Tablespoons yeast
2 cups of warm water
about 9-10 cups of all purpose flour
at least 1 cup of butter
Instructions

  1. Scald 1 1/2 cups of milk, 3/4 cup sugar and 1/2 cup of butter, in a microwave safe bowl, for about 2 minutes. Cutting the butter into pieces helps it melt faster. There will probably be some little cubes of butter still floating in the hot mixture, they will melt.
  2. Add yeast to this hot mixture, but it will be too hot to just dump the yeast straight in (it would kill it!). To cool it down stir in 1-2 cups of flour, then add 1 egg and 1 Tablespoon of salt, and leave it to cool for a couple of minutes. Meanwhile, in a measuring cup dissolve 2 Tablespoons of yeast in 2 cups of warm water and 1 Tablespoon of sugar. Let it sit for a couple of minutes until it is bubbly.
  3. Make sure your milk mixture is just warm, not boiling and add the yeast mixture!
  4. Using a fork or wooden spoon, gradually stir in 9-10 cups of flour (counting the flour you have already added to cool it earlier). I would recommend only adding 2 cups at time and stirring in between. These rolls turn out so much better when they are mixed by hand.
  5. At the end the dough will be dense and sticky, and may be hard to stir, you can use your hands to incorporate the rest of the flour if needed. Be sure not to add too much flour. Then smooth the dough out and cover the bowl with plastic wrap. Leave it in a warm place and let it rise.
  6. When your dough is close to raising completely, butter 2 cookie sheets and set them aside.
  7. Let the dough raise until it has doubled in size.
  8. Cover your working space with flour to prevent the dough from sticking. Dump your dough out and divide it into 4 balls. Eyeball the sizes, then lift them up and feel the weight of each ball. Try to make them even, but they don’t have to be perfect.
  9. Using one ball of dough at a time: roll the dough into a circle on a floured counter. Once it is rolled out spread the top with butter from edge to edge. You will use about 2 Tablespoons per circle of dough.
  10. Cut the dough into quarters using a pizza cutter.
  11. Then cut each quarter into 3 pieces. You should end up with 12 triangles from each circle of dough.
  12. Roll the dough starting with the wide end of the triangle
  13. Tuck the tail of the triangle under the roll and place it on the buttered cookie sheet. You will make 3 rows, with 8 rolls per row. This will give you 24 rolls per pan. Two balls of dough will fill 1 pan. You will get a total of 48 rolls!
  14. Pre-heat your oven to 350 degrees. Place the pans of rolls in a warm place (on top of the oven if possible) to let them rise. Once they are touching and full in size, cook (one pan at a time) in the oven ’till they are golden brown. About 10 – 15 minutes, It may take longer depending on how hot your oven cooks. Keep a close eye on your first pan to get the right time for the second.
  15. While they are still hot and fresh out of the oven run a stick of butter over the tops of the rolls for a delicious buttery glaze.
***If you decide to just do regular dinner rolls like I did then you need to bake them for 20-22 minutes. Ya know, give or take a couple minutes. 20 worked great for me.

Copy Cat Texas Road House Rolls

Ingredients
2 cups milk
3 TBS butter
1 TBS active dry yeast (or 1 package)
½ cup warm water
½ cup sugar, divided
½ cup honey
about 7.5 cups flour (+ or – up to ½ cup), divided
2 eggs
2 tsp salt
butter (for melting on top)

Instructions
1. Put milk in a small sauce pan over medium heat. Bring to a boil and remove from heat. Allow to cool slightly.
2. Melt your butter in the microwave. Set aside.
3. Combine yeast, warm water and 1 TBS sugar in a mixing bowl. Allow yeast to bubble.
4. Add remaining sugar, honey, milk, and 3.5 cups flour to the yeast mixture. Beat together for a couple minutes.
5. Add butter, eggs and salt and stir well.
6. Add additional flour ½ cup at a time until dough begins to separate from the sides.
7. Let rest for a few minutes.
8. Knead dough for about 5 minutes. Add additional flour by the tablespoon if dough gets sticky.
9. Remove dough from bowl and grease bowl.
10. Return dough to bowl and turn it over so it all gets covered in grease.
11. Loosely cover bowl with plastic wrap.
12. Allow to rise till doubled in size. About 45 minutes (Depending how warm your house is)
13. Once the dough has doubled, punch it down for about a minutes.
14. Roll the dough out till it is about ½ inch thick.
15. Fold the dough in half, so its now about 1 inch thick and roll over the dough a little to seal the two halves.
16. Cut the dough into approximately 2 inch squares.
17. Place dough on a greased baking sheet and cover loosely with plastic wrap.
18. Allow to double in size again. About 1 hour.
19. Bake at 350 degrees for about 15 minutes, until golden brown.
20. Immediately rub the tops of the rolls with butter.
